An original and a classic - bacon wrapped duck

2-3 medium duck breasts per person
Sliced Green peppers or Jalapenos
Bacon
Round Toothpicks
Marinade:
1 can Coke
1 cup of your favorite Italian salad dressing
1 cup red wine
1/2 cup Worcestershire sauce
2 Tbsp Balsamic Vinegar
1/2 tsp Liquid smoke
Once the breasts are marinaded I slice the Jalapenos in half or slice a green pepper into roughly 8 slices, depending on its size. If hunting, I will precut the peppers and store them in water to keep them fresh. Wrap one breast around each pepper slice and wrap a bacon slice around the breast/pepper roll.
I use two round toothpicks to secure the roll and grill on indirect heat at 350°F for about 22-28 minutes, depending on the size of the breast. I like my ducks medium-rare. I will turn each breast at least three times during this process. The last five minutes of cooking, I turn on all the burners to low and rotate each breast about every minute to brown the bacon.
If using a portable grill in the field and you don't have any advanced burner controls, grill with direct heat and as low temperature as possible. Turn the breasts about every five minutes until the bacon is browned nicely. Time will vary depending on grill temperature, size of breast, and outdoor temperatures, but figure at least 20 minutes.
This meal goes well with: *wild rice, squash, sweet potatoes, buttered noodles, fresh salad, and *sauteed Portabella mushrooms.
